Why would you ever want to do such a thing?
Perhaps because you see the rainbow wheel a little too often (i.e. your hardware doesn’t quite cope with OSX)? Perhaps you are tired of paying for operating system upgrades? Perhaps you want a little more configurability than OSX gives you?
Ubuntu has a power PC version which installs quite nicely on most macs. Check out this wiki page that I started to see how compatible your hardware is.

Ubuntu Breezy works great on Powermac G5 dual 2ghz, the PCI-X model. Fans under control, sound works, everything. Ubuntu is one of the only distros out there with a recent ppc64 kernel, other than Fedora which has huge X issues with PPC right now.
Ubuntu PPC only uses around 200MB or ram, sitting at the desktop as compared to OS X needing almost 700MB just running at the desktop. I made an account to edit the wikipage but keep getting the error ‘wrong password’ when I try to login. Sorry.
